Secretly Healthy Cookies - Vegan + Gluten Free

Eating healthy is important for everyone. But it is especially important if you suffer with chronic health problems. Some have found they benefit from specific diets or avoiding trigger foods, such as going gluten free or avoiding dairy. Regardless of what your personal dietary requirements are, we all want to eat things we enjoy. We want to eat things that are exciting, not simply filling a nutritional need. My favorite thing is finding recipes that are both healthy and delicious. When I found a recipe for a chickpea cookie pie a few years ago, I had to try it! Since then I have taken that recipe and played around with it until I was able to develop a recipe for healthy cookies, using ingredients that I feel comfortable eating and giving my family. One of the best things about this recipe is that it is completely customizable. In the mood for chocolate chip cookies? We got you covered. Feeling some raisin walnut cookies? We can do that too! This recipe can do pretty much anything. Without further ado, here’s the best secretly healthy cookies you will ever have!

Secretly Healthy Cookies 1+1/2 cups cooked chickpeas/garbanzo beans 1 cup whole oats

1 cup coconut sugar 1/4 cup applesauce* 3 tablespoons coconut oil 2 teaspoons baking powder

2 teaspoons vanilla

1/2 teaspoon baking soda few shakes of sea salt

Preheat oven to 350F. Blend in a food processor, until well mixed. Add in any additional flavors you would like and stir well.** Spray or spread oil on 2 cookie sheets. Use cookie scoop, ice cream scoop, or spoon to scoop out cookie dough. Bake for approximately 10 minutes at 350F.

*Applesauce can be replaced with another fruit or veggie puree, such as pears or zucchini. **Ideas for add-ins: 1/2 cup dairy free chocolate chips 1/2 cup dark chocolate, melted 1 tablespoon cinnamon !/2 cup dried fruit of choice !/2 cup chopped nuts of choice or mix and match several of the above, there are so many delicious possibilities!

Wanting something even quicker and easier? Pour the completed batter into a 9x9 baking pan and bake for approximately 20 minutes at 350F for cookie bars.
