In case you don't already know, nice cream is a much healthier version of ice cream made by blending frozen bananas. There are so many ways to customize it, adding whatever flavors you like. One favorite in our house is adding peanut butter and chocolate, yum!
But for a lighter, fruit packed treat I recently mixed up this Blueberry Nice Cream for a yummy, summery dessert.
My husband was a little disappointed when he initially found out it was blueberry flavored, he's not huge fan of fruit generally. But he quickly changed his tune after trying it and told me I should definitely share the recipe! In other words this gets a thumbs up, even from the skeptics.
So here is the recipe, hope you enjoy it as much as we did.
BLUEBERRY NICE CREAM
2 frozen bananas
3/4 cup frozen blueberries
1/4 cup frozen pineapple
1/4 - 1/2 cup almond milk, or milk of choice
Put all the fruit in a food processor and blend then add the milk a little at a time and continue to blend until smooth and creamy.
The amount of milk you use may vary depending on your food processor or how soft you prefer it to be.
This can serve two, but absolutely no judgment here if you eat the whole thing yourself 😉
